Chicken Soup

We're making Chicken Soup. Just like Granny used to make. Most of us have this stuff on hand, but if you don't it's very inexpensive, and it's delicious!

Pumpkin Spice is one way to know that fall is on the way, but soup is my FAVORITE fall activity!

Ingredients needed for Chicken Soup

Ingredients: Chicken on the bone, Carrot, Onion, Celery, Parley, Dill (fresh if you can), Garlic Cloves and Chicken Bouillon.


Raw Soup

I used baby carrots, you don’t have to do anything to them except dump them in. Rough chop the celery. Same with onion.

Smash Garlic

Smash the cloves to release their fragrance and flavor, but don’t chop.

Nearly soup!

Fill the pot with water and simmer over medium fire

Secret ingredient

Add a healthy blop of Chicken Bouillon. This is where your salt is added. It it PLENTY salty. But adjust for your taste.

Getting there

Skim any scum off the top and take out the chicken. Let it cool until you can handle it. Shred the meat off the bone, and return the meat back into the soup. Taste. Adjust with seasoning if needed. The veggies should be soft.

Soup with Matzo Balls

You have some choices for additions. Here I have matzo balls. But you can add cooked rice or pasta. You don’t want to store pasta in the soup though, it will get mushy. Just have some in a separate container, or cook it in the soup on the stove top.

I usually eat my soup while working.
